Nestled in the hills of Poligny, O2Y is a story of friendship and passion that started in 2020 when Olivier Guala (Gallus) teamed up with longtime friends Yves Roy (Ex. Valentin Morel) and Yoshinori Kuroda (assistant to Emmanuel Houillon at Domaine Overnoy) to craft masterful zero-zero wines of. This trio knows a thing or two about natural wine and the results are seriously exciting.
O2Y's approach to winemaking is staunchly natural and deeply respectful of nature. They forgo any and all chemicals in the cellar and vines, crafting splendid juices from top-quality, biodynamically farmed grapes. The results are deeply moving, lively wines with nothing added and nothing removed.
Beyond this, their project is also anchored in a philosophy of fun: they often source grapes from good friends across France and experiment with vinifications that they wish they found more of. Very long pressings, carbonic or semi-carbonic macerations, blending of Pinot Noir with Pinot Gris, the three friends have a blast.
More recently, Gallus was joined by Romain Doerler, a young winemaker from Fanfan Ganevat, bringing fresh ideas from Rotalier. Together, they're diving into vine cultivation with their own plots in Arbois and Poligny, growing varietals like Pinot Noir and Savagnin.
